Cider/Perry

An apple (cider) or pear (perry) based fermented drink, cider has been produced since the late 11th century.

Ranging in color from a light yellow to medium brown, cider can also be either clear or cloudy, depending on the level of filtration between pressing the apples and the fermentation. While most cider is sparkling, some still (non-carbonated) ciders are produced.

Best served cool, at 46-54 degrees, and in a wine glass, goblet, or chalice.

Our Cherry Tree cider combines the finest American heirloom apples, which were popular in the United States in the 18th and 19th centuries, with tart cherries. The finished product has the clean, rich flavor of fresh cherries with the depth and elegance that comes from using freshly pressed U.S.

With a dry fermented apple base we add Sonoma Wildflower Honey. We finish up with a golden colored cider at 5% alcohol by volume with a slight spritz because of the density of the honey. The cider starts the palate with sweetness and then finishes dry. It is one of our more complex ciders.

First released in 1996, this is the first Perry cider made in California. It became very popular very quickly, as it is so refreshing. It is made from apple and pear juices. We use champagne yeast in all our ciders and ferment for 10-14 days.
