Ah, a paradoxical case of small = large. After decades of tinker, tweak, improvise and analyze, David honed in on a surprising insight: size matters. Smaller organic apples simply yield bigger, more intense flavors. And so, The Hatchet was born. Intensity behind us, the subtle work of balance and nuance began.
Using a unique blend of native organic apples, we handcraft each batch to bring out fresh, ripe apple aromas, carefully pairing sweet and tart varietals to ideal effect. Cider for your friend that loves chardonnay
The hatchet pours a pale champagne color with very little carbonation. I get fresh apples and sour apple mash (as is highlighted in farmhouse ciders) when I smell from my glass. Taste is fruity then dry with an apple crispness giving way to a white wine dry finish (touching on the farmhouse mash flavor during the transition). Some times the juxtaposition of the crisp and the earthy was good and other times distracting. Depending on the sip, I'd give an overall score of a 3 or 4.
