French for "beer that has been guarded", this beer style is a variation of the Farmhouse Ale that was traditionally brewed at the end of the cool months and consumed during the warmer months.
Often bottle-conditioned, the color can range from golden to a deep amber, depending on the type of malts that are used. The style shares the earthy cellar-like flavors, Noble hop aromas, and fruity esters of the Farmhouse style, but toasty malt flavors along with a moderate hop bitterness give this style a flavor profile of its own.
Best served either cool or at cellar temperature, from 46-57 degrees, in a stemmed tulip or large wine glass.
