Brief History and Information: 

Jackalope Brewing Company is owned by Bailey Spaulding, Robyn Virball and Steve Wright, three charming young people with an affection for beer. Bailey and Robyn became friends in September 2002 in the tiny Scottish village of St. Andrews, where Bailey was doing a semester abroad and Robyn was completing her undergraduate degree. During the next eight years, they both graduated, Bailey went off to Vanderbilt Law School, and Robyn entered the working world, but both thought they were meant for much bigger and more alcoholic things. Steve joined the mix at the end of 2010.

After picking up your souvenir glasses, you move into a nice-sized waiting room that got a bit snug when the last of the 25 or so guests arrived. This room is complete with some board games, plenty of seating, and some interesting art on the walls. Once your tour time has arrived, your tour guide (ours was one of the assistant brewers) will offer up your first sample and give you a little introduction talk before taking you through a door into the brewery area.

Rompo is a twist on an Irish Red, using classic earthy UK hops and caramel malts. We gave it our own Tennessee take by adding flaked rye to the mash. Rompo is a very smooth drinking brew with notes of fruit and caramel, while the rye contributes a spicy and clean finish.
